Parmesan-Crusted Chicken with Watercress Salad

1 T whole grain mustard
1 egg white
1 c whole wheat bread crumbs
1/3 c grated Parmesan cheese
1 tsp lemon zest
4 chicken breasts (pound to 1/2 thickness)
1/4 chopped basil
1 T balsamic vinegar
2 tsp olive oil
1/8 tsp salt
2 bunches watercress, arugula or mixture of both
3 c grape tomatoes, quartered
1/2 red onion sliced

Preheat broiler. Combine mustard and egg white in shallow bowl. Combine bread crumbs, cheese and lemon zest in another bowl. Coat chicken with mustard mixture and then dip into bread crumb mixture, pressing to coat thoroughly with crumbs. Place on prepared rack. Broil 10 minutes, turning once or until chicken is golden brown and thermometer inserted into thickest portion registers 160 F and juices run clear. Whisk basil, vinegar, oil and salt in medium bowl. Add watercress, tomatoes and onion, and toss to coat well. Divide salad evenly among 4 plates and top each with 1 sliced chicken breast. Garnish with shaved Parmesan, if desired.

Crock Pot Hawaiian BBQ Chicken

4-6 Boneless Chicken Breasts
1 Bottle Archer Farms Hawaiian Style BBQ Sauce
1 20oz can Pineapple Chunks, drained

Place chicken breasts in the crock pot, cover with sauce. Empty can of drained pineapple chunks on top. Cook on high for 2-3 hours or low for 406 hours. Shred chicken while still the crock pot so the chicken will be well coated with sauce. Serve over rice and Enjoy!!

I actually didn't have any Archer Farms BBQ sauce because it's at Target and I don't live by a Target so I bought Famous Daves Sweet and Sassy and McCormick's Hawaiian Marinade and used the entire bottle of Famous Daves and 1/2 the bottle of McCormick's and it was AWESOME!!!

Mac N Cheese Casserole

I came across a recipe like this but it called for spam so I improvised and it was very fast and easy and pretty good.  I think it might be pretty good with chicken too. 

1 box of mac & cheese
1 lb hamburger
1 onion, chopped
1-2 bell peppers, chopped
1 can cream of mushroom soup

prepare mac & cheese as directed.  brown hamburger, onions and peppers.  drain grease.  add soup.  add mac & cheese and mix together.  Place in a greased casserole dish and bake for 30 minutes at 350 degrees.

Sloppy Cups

Sloppy Joe Sauce (see recipe here)
2 cans refrigerated bisquit dough
shredded cheddar cheese

Open biscuit dough and press individual biscuits into a greased muffin tin forming a "cup". Place a scoop of beef mixture into the center of each biscuit cup and bake at 350-degrees for about 15-20 minutes (take them out when the edges are a deep, golden brown). Immediately top with cheese, then serve!   We also topped with extra sloppy joe sauce.

Dr. Pepper Baked Pasta

make sure you check the notes I added at the bottom before you make this. 


2 lbs hamb.
1 cup chopped onion
1/2 tsp garlic powder
1/2 tsp italian seasoning
1/2 tsp salt
1/2 tsp black pepper
1 tsp chili powder
1 (12 oz) can Dr. Pepper
2 (8 oz) cans tomato sauce
2 Tbsp worcestershire sauce
1 pkg pasta
1 1/2 c shredded mozzarella cheese

Brown hamb.  Add onion and seasonings.  Cook about 5 minutes.  Add Dr. Pepper, tomato sauce and worcestershire sauce.  cook for another 5 minutes.  Stir in cooked and drained pasta.  Stir in cheese.  Pour 1/2 mixture in a greased casserole dish.  Bake at 350 degrees for 20 minutes.  Pour remaining mixture into a foil casserole pan and cover tightly with foil.  Date, label and place in freezer to fix for another day.

(Notes: I didn't add onions to my hamburger.  I actually sliced up the onions and cooked them seperately in butter and brown sugar and put them on top of the pasta--it was very yummy!! I also used colby jack cheese and it was very good too!!)

Dr. Pepper Ribs

Ingredients:

For the rub:
1/4 cup of salt
1/4 cup of black pepper
1/4 cup of brown sugar
4 teaspoons of mustard powder
1/2 teaspoon of cayenne
2 teaspoons of chipotle powder
1/2 teaspoon of allspice

For the glaze:
2 cups of Dr Pepper
1 cup of ketchup
1/2 cup of mustard
1/4 cup of apple cider vinegar
2 tablespoons of molasses
2-4 teaspoons of chipotle powder

Two racks of St Louis ribs
1/4 cup of Dr Pepper

Coat the ribs with the rub, wrap in plastic and place in the refrigerator for at least four hours.

Heat the oven to 300 degrees and bring the ribs to room temperature.

In a foil-lined large baking or roasting pan, arrange the ribs with the meat side up, pour in 1/4 cup of Dr Pepper, cover pan tightly with foil and place in the oven.

Meanwhile, place all the glaze ingredients in a pan, bring to a boil and then simmer for 20 minutes until thick and syrupy.

After an hour and a half, take the ribs out of the oven and spread some of the glaze on each side of the racks. Place back in the oven, meat side up and cook uncovered for 30 minutes.

After 30 minutes, take out the ribs and spread more glaze over them and cook for 30 more minutes or until ribs are desired tenderness.

At this point, take the ribs out of the oven, spread more glaze on them and then cook each side under the broiler for four minutes.

Divide and serve!
Notes: You can use my chipotle ketchup instead of regular ketchup for the glaze and I used Dublin Dr Pepper, but you can use regular Dr Pepper, just don't use diet!

Spicy Dr. Pepper Shredded Pork

I got this off of tastykitchen.com

1 whole lg onion
1 whole pork shoulder roast (pork butt) - 5 to 7 lbs
salt and freshly ground black pepper
1 can (11 oz) chipotle peppers in adobo sauce
2 cans dr. pepper
2 tbsp brown sugar

preheat oven to 300 degrees.  Peel onion adn cut into wedges.  lay them in the bottom of a lg. dutch oven.  generously salt and pepper the roast, then set it on top of the onions in the pan.  Pour the can of chipotle peppers over the pork (include the sauce).  Add both cans of dr. pepper.  Add brown susgar to the juice and stir in.  Place lid tightly on pot, then set in oven.  Cook for at least 6 hours, turning the roast 2 or 3 times during the cooking process.  Check meat after 6 hours, it should be falling apart.  If it's not falling apart return to the oven for another hour.  Remove meat from pot and place on cutting board or other work surface.  Use 2 forks to shred the meat, discarding large pieces of fat.  Strain as much of the fat off the top of the juice as you can and discard it.  Return shredded meat to the juice and keep warm until ready to serve.

Sloppy Joes

1 lb hamburger
1 -2 stalks celery, grated
1 can tomato soup
1 Tbsp prepared yellow mustard
1 Tbsp chili powder
1 Tbsp sugar
salt & pepper to taste

brown hamburger, drain.  add soup and mustard.  simmer over med. heat.  add remaining ingred.  simmer for about 5 more minutes over med. heat. 
Serve over hamburger buns.

Strawberry Rhubarb Pudding Cake

I found this on http://www.littlelucylu.com/ and had to try it!!


2 -3 cups fresh Straberries (sliced/chopped)
2/-3 cups fresh rhubarb (chopped)
1 pkg. Strawberry Jello
1 Yellow Cake Mix (and what is necessary to prepare as per box instructions)
6 Tbsp Butter
1/3 cup flour
1 1/2 c sugar
1/2 tsp nutmeg
1/2 tsp. cinnamin

In a bowl mix together strawberries, rhubarb adn jello.  Set aside.
Prepare yellow cake mix as directed.  Spread into 9/13 pan.
Spoon Strawberry mixture over cake mix.
In another bowl combine remaining ingredients, mix with a fork until butter is thoroughly combined and crumbly.  Sprinkle mixture over fruit layer.  Bake at 375 degrees for approx. 45 minutes. 
Be amazed, the layers have switched places.

Jalapeno Strawberry Jam

4 cups crushed straberries
1 cup minced jalapeno peppers (I removed the seeds)
1/4 cup lemon juice
1 (2 ounce) package powdered fruit pectin
7 cups sugar
1/2 Tbsp butter
8 half pint canning jars with lids and rings

Place strawberries and jalapenos in a food processor. Place the crushed strawberries, minced jalapeno pepper, lemon juice and pectin into a large saucepan and bring to a boil over high heat. once simmering, stir in the sugar until dissolved, return to a boil and cook for 1 minute, add butter. Sterilize the jars and lids in boiling water for at least 5 minutes. If there is any foam on top of jam skim it off then pack the jam into the hot, sterilized jars, filling the jars to within 1/4 inch of the top. Run a knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles (I didn't worry about this because it was so runny that there wasn't any air bubbles). Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids, and screw on rings.
Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil over high heat, then carefully lower the jars into the pot using a holder. Leave a 2 inch space between the jars. Pour in more boiling water if necessary until the water level is at least 1 inch above the tops of the jars. Bring the water to a full boil, cover the pot, and process for 20 minutes. (It originally said 10 minutes to process but since I am at a higher altitude I did it for 20 minutes.)
Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart. Allow to cool overnight Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool, dark area. This is SOOOOOOOO YUMMY!!!!

Vanilla Pudding Chocolate Chip Cookies

I got this recipes from twopeasintheirpod.com and it turned out GREAT!!!
1 cup unsalted butter, at room temperature
3/4 cup brown sugar
1/4 cup granulated sugar
1  3.4 oz package instant vanilla pudding mix  (I also tried it with chocolate pudding and it was super good!)
2 large eggs
1 tsp. vanilla extract
2 1/4 cups all purpose flour
1 tsp baking soda
1/2 tsp salt
2 cups semi-sweet chocolate chips
Preheat oven to 350 degrees.  Using a mixer, beat together butter and sugars until creamy.  Add in pudding mix, eggs and vanilla extract.  In a med. bowl, whisk together flour, baking soda and salt.  Add dry ingred. to wet ingred. and mix until just combined.  Stir in Chocolate chips.
Drop cookie dough by rounded tablespoons onto prepared baking sheet.  Bake for 10 - 12 minutes or until slight golden and set.  Remove cookies from oven and let cool on baking sheet for 2 minutes. 
Makes about 3 dozen cookies.

Hamburger Pie

1 lb hamburger
1 can tomato soup
1 can green beans
salt & pepper to taste
your favorite Mrs. Dash seasoning or other type of seasoning to taste
Mashed Potatoes
1 egg

Brown hamb. and drain. add tomato soup, beans, seasoning. Pour into greased baking dish. In separate bowl prepare mashed potatoes, add egg. mix. spoon mashed potatoes on top of hamburger mixture. Add seasoning on top. Bake at 350° for 30 minutes.

This is a very easy recipe and is very quick. My mom used to make this all the time and it is one of the first things I learned how to make. I hope you enjoy it!!

Robyn's Sloppy Joes

Ok, so I am pretty proud of myself. I absolutely can't stand sloppy joes, but my husband loves them so I decided to make them, but... I didn't have a recipe so I decided to get creative. I got a couple different recipes from people and then I improvised.

Robyn's Sloppy Joes

1 lb hamburger
1/2 cup ketchup
1 T mustard
1/3 cup brown sugar
1 green pepper (chopped)
1 onion (chopped)
1 can tomato soup
1T worchestershire sauce
1 small can (i think it is 15 oz) bush's baked beans (country style)
1 tsp chilli powder
1/2 tsp curry powder
1 tsp garlic powder

Brown hamb. onion and green pepper. Add ketchup, mustard, soup, worchestershire sauce & brown sugar. Cook over medium heat. add beans. add chili powder, curry powder and garlic powder. simmer. you can add more of the powders and some salt and pepper to taste (don't go overboard on the curry powder though).
Spoon over hamburger buns and ENJOY!!!

Poor Man's Soup

I got this recipe from a friend of mine and it is way super good!!!

1 lb hamburger
1 lb ground sausage
1/2 pkg bacon (cut up)
1 onion finely chopped
1 package mixed veg.
3 or 4 med potatoes (chopped to the size of your liking)
1 can corn (undrained)
2-3 packets brown gravy mix
water
chicken bullion
onion powder
salt and pepper

in a lg pan cook veg., corn (with liquid), and potatoes in water (enough water to cover veg.). In another pan brown hamb, sausage, bacon and onion. Add meat to veg. Add bullion and other seasonings to taste. If more water is needed add a little bit more. add brown gravy mix 1 packet at a time until thickness you like.

Fancy Chili

This is Super Super Yummy!! I got it out of the book Home Cooking with Trisha Yearwood.

1 Tbsp olive oil
2 garlic cloves, minced
1/2 cup chopped green onion (I just used 1 med. onion, chopped)
1/2 lb lean ground beef (or you can use ground turkey breast)
2 Tbsp chili powder
1 28-oz can fire-roasted diced tomatoes
1 can black beans, rinsed and drained
1 med. bell pepper, diced
3 carrots, peeled and grated
1/2 tsp. brown sugar
pinch of salt

In a large saucepan, heat the oil over med heat. Add the garlic and onion and cook for about 1 minute. Add the hamburger and cook until browned. Stir in chili powder until fully combined. Add the tomatoes, beans, bell pepper, carrots, brown sugar and salt. Bring mixture to a boil, then reduce the heat to low. Cover and simmer for 15 minutes. Serve over rice with a dallop of sour cream. Enjoy!!

Cowboy Spaghetti

Oh my gosh, this was way yummy!!!!! I got it from Favfamilyrecipes.com.

1 pkg (1 lb) spaghetti noodles
6 slices bacon (chopped)
1 Lb ground beef
1 medium onion (chopped)
3 garlic cloves (minced)
salt & pepper (to taste)
2 tsp Tabasco sauce
1 Tbsp. Worcestershire sauce
1/2 Lb deli pastrami, roughly chopped
1/3 c. pepperoni, chopped
2 Tbsp canned, chopped jalapeno  (I actually left these out and it was just a right amount of spicy)
1/2 c. sliced mushrooms
1 small can diced olives
½ c. beef broth
1 (14 oz) can fired roasted diced tomatoes
1 (8 oz) can tomato sauce
sharp cheddar cheese, shredded
green onions (chopped)

Heat a large deep skillet to medium-high heat. Add bacon and fry until crisp, remove with a slotted spoon and drain on paper towels. In the same skillet add ground beef. When beef is browned stir in onions and garlic. Season with salt, pepper, Tabasco and Worcestershire sauce. Stir in bacon, pastrami, pepperoni, jalapeno, mushrooms and olives. Cook, stirring occasionally for about 5 minutes.

Add beef broth and cook for an additional 5 minutes or so. Stir in tomatoes and tomato sauce. Cover and reduce heat to low (at this point you can also throw everything in a crock pot and cook on low heat for a few hours. If it gets too thick, add another can of fire roasted tomatoes and a little more beef broth). Prepare spaghetti noodles according to package directions. Drain noodles well, add to meat sauce, and toss it all together (or you can serve with the sauce over the top). Top with sharp cheddar cheese and green onions.

Caramel Dip

1 pkg wrapped caramels (unwrapped, obviously)
1 pkg cream cheese
1 small container sour cream

over med. heat melt caramels and add cream cheese and sourcream.  mix together.   Enjoy!!  This is really good with apples!!

Football Dip

We had a "Dip" Party at work and this was a dip that one of the girls brought and it is so good and so easy!!!

1 pkg ground sausage
2 pkg cream cheese
2 cans rotel tomatoes (original or mild)

Brown the sausage. in a saucepan mix sausage, cream cheese and tomatoes until cream cheese is melted. If you are having it all day put it in the crockpot to keep it warm. ENJOY!!!! It is so yummy!!!!

Bean Dip

1 can kidney beans, drained
1 can garbanzo beans, drained
1 can red beans, drained
1 can white corn, drained
1 can black beans, drained
1 can black eyed peas, drained
cilantro
1 small red onion, chopped
1 tomato, chopped
1 can rotel tomatoes, drained
2 - 3 avocados, chopped
salt and pepper to taste
Kraft HONEY Catalina Dressing

Mix together and serve with Fritos :)

Apricot Glazed Pork Roast

Apricot Glazed Pork Roast

1 can chicken broth (10 1/2 oz)
1 jar apricot jam (18 oz)
1 lg onion, chopped
2 Tbsp dijon-style mustard
1 boneless pork loin roast (about 4 lbs)

mix chicken broth, jam, onion, and mustard together in crockpot. Add roast, turn to coat. Cookon low for 8-9 hours or on high for 4-5 hours.
I doubled the sauce recipe.

Family Spaghetti Pie

Family Spaghetti Pie
1 lb ground beef (I used sausage instead)
1 cup Pace Picante Sauce
1 cup spaghetti sauce (I used an entire bottle)
1/2 of a 16 oz pkg of spaghetti cooked and drained (about 3 cups, I ended up using more)
1/3 cup grated parmesan cheese (the sprinkle kind)
1 egg, beaten
1 Tbsp. butter, melted
10 oz ricotta cheese
1 cup shredded moz. cheese

Brown hamburger, drain grease. Add spaghetti sauce and pace picante sauce, cook until hot and bubbling.
In separate bowl mix spaghetti, egg, parmesan cheese and butter. Layer spaghetti in bottom of 10-in pie plate (I used a casserole dish instead). Spread Ricotta cheese on top of spaghetti mixture, Cover with Sauce mixture. Bake at 350 degrees for 30 minutes. Sprinkle moz cheese on top and let stand for 5 minutes... ENJOY!!!

This actually worked better in a casserole dish because of how it is layered so it doesn't boil over in the oven.

Chicken & Broccoli Fettuccine

Ok, I got this from Campbell's Kitchen and tried it last night and it is sooooooo YUMMY!

1/2 of a 1 lb pkg of spaghetti
2 Tbsp Butter
1 lb boneless skinless chicken, cut into strips or cubes
1 cup fresh or frozen broccoli
1 can cream of mushroom soup
1/2 cup milk
1/2 cup grated parmesan cheese
1/4 tsp pepper

Cook spaghetti as directed on package adding broccoli at about the last 4 minutes of cooking, drain when finished.
Melt butter in a separate pan and cook chicken until brown and tender. Add soup, milk, parmesan cheese and spaghetti. Cook until bubbly. Enjoy!
We like ours a little more saucy so we doubled the sauce part of the recipe.

Weeknight Lasagna Toss (Kraft Foods)

I got this out of the kraft foods magazine and it turned out really good.
1 lb hamb.
2 green peppers (chopped)
3 cloves garlic (minced)
1 jar (26 oz) spaghetti sauce
1 2/3 cup water
1/4 cup kraft zesty italian dressing
12 oven ready lasagna noodles (broken into squares)
1 cup shredded moz. cheese

Brown hamburger in large saucepan. Stir in peppers, garlic, spaghetti sauce, water and dressing. Bring to a boil. Add noodles. Stir and cover. Cook on Med/low heat for 10-15 minutes or until noodles are tender, stirring occasionally. Remove from heat. Sprinkle with cheese, cover and let stand for 5 minutes.

Enjoy!

Chicken Diable

4 -6 boneless skinless chicken breasts
1 cup honey
1/2 cup mustard
2 tsp curry powder
2 tsp salt
8 TBSP butter

Melt butter over med heat in med. sauce pan. Add honey and mustard. Add curry powder and salt. Place chicken in 9x13 baking dish. Pour sauce over chicken. Bake at 375 degrees for about 35 - 40 minutes or until chicken is cooked through. Serve with Rice.

Dutch Oven Chili

Dutch Oven Chili
Ingredients:
1 lb Ground Beef
1/2 lb Bacon
1/2 lb Sausage
1 15oz can Oven Baked Beans
1 15oz can Kidney Beans
1 15oz can Pinto Beans
1 tbs Mustard
1 cup Catsup
1 tbs Worcestershire sauce
1 tbs Vinegar
1 tbs Brown Sugar
1 lg Onion-chopped fine
1 lg Green Pepper-chopped fine
1 lg can of Tomato JUICE
1 tbs Chili Powder (1/2 for mild)
Directions:
Brown bacon, add onions, & peppers. Then add beef, & sausage to brown. Add all ingredients & simmer till ready to serve

Citrus Baked Tilapia

1 lb fresh tilapia fillets
2Tbsp. extra virgin olive oil
1 Tbsp lime zest
1/4 c freshly squeezed lime juice
1/4 c orange juice (preferable freshly-squeezed)
2 Tbsp. Thai sweet red chili sauce
1 tsp salt
1/2 tsp freshly ground black pepper

preheat oven to 400 degrees. Rinse fillets and pat dry. In a shallow glass baking dish, whisk together olive oil, lime zest, lime juice, orange juice, chili sauce, salt and pepper. place tilapia fillets in the dish, turning to coat well with marinade. Bake 10 to 12 minutes or until the fish flakes easily with a fork.

I doubled the recipe and also used lime zest and orange zest. Just a heads up, it is a little limey but Zack didn't think it was too sour and he hates sour stuff so... there ya go. It was yummy!!! Brayden LOVED it!!!
